“Say! I like green eggs and ham! I do! I like them, Sam-I-am!” The good news is there are no green eggs with ham here, unless it’s St. Patty’s Day.
In my book breakfast is the best meal of the day. This is a hold over from my collage days where the mantra was something like ‘If you are gong to drink all night you need to feed the furnace in the morning.’ Since I am in Denver and close to the 16th Street Mall what better place to look for the home of the Denver Omelette™. Really, who the hell knew there was a home for this, but there is and I found it.
I visited this location twice. Both times it was before 8:00 am and the place was crowded. Service was fast, pleasant and entertaining. Where else can you get a Colorado flag in your Denver Omelette™ and where else will you find this spelling of omelet Trade Marked? Day 2 was just a crowded and service was still very quick, I opted for the Eggs Benedict. The hollandaise sauce was flavorful and the eggs were done to perfection.
